A bold, peppery extra virgin olive oil from early-harvest Chetoui olives in northern Tunisia. Cold-extracted, unfiltered, and rich in polyphenols for intensity, freshness, and antioxidant strength. Ideal for finishing, drizzling, or gifting to people who know good olive oil.

Fresh and vibrant with a distinctly green character. You’ll taste green olive and fresh herbs up front, followed by a gentle bitterness and wonderful peppery warmth at the finish. Bold but well-balanced, this is an oil that adds flavor without overpowering the dish.

Harvested in October from early-season Chetoui olives in northern Tunisia, then milled within hours to lock in freshness. Cold-extracted using a modern two-phase, mechanical system with no added water, preserving flavor, aroma, and naturally high polyphenols.

Best used as a finishing oil for drizzling, dipping, and dressing dishes where flavor matters. Suitable for moderate-heat cooking, though heat will soften the taste and reduce some of its natural polyphenol benefits.

Certified organic by ECOCERT and USDA Organic, from grove to bottle. Independently lab tested in the U.S., with a verified 885 mg/kg polyphenol count, confirming both its freshness and naturally high antioxidant levels.

Chetoui is Tunisia’s signature olive, grown almost extusively in the country's northern hills. When picked early, it produces an oil with vivid freshness, real structure, and naturally high polyphenols. This is the Chetoui difference, and once you taste it, it’s hard to forget you ever settled for anything else.

Very High in Antioxidants

Selma contains 885 mg/kg of polyphenols (those are the antioxidants), placing it 4x higher than most olive oils on store shelves. These natural antioxidants help to reduce inflammation and support heart health.

Exceptionally Fresh, Naturally

Selma is 0.16% free fatty acids, well below the 0.50 extra virgin limit set by the International Olive Council. This low acidity points to fresher oil, healthier olives, and careful handling at every step, from grove to bottle.

Stable, Pure, & Well-Preserved

Selma’s peroxide value is 12, well below the limit of 15 for extra virgin olive oil. A lower peroxide level means less oxidation, a cleaner, more stable flavor, and a longer shelf life that preserves freshness over time.

Can I cook with it or use it in a pan?

Yes. You can absolutely cook with it, especially at low to medium heat, where it keeps most of its flavor and quality. That said, this oil really shines when used to finish dishes, drizzle over food, or dress salads. Once you push it to very high heat, nothing dangerous happens, but you do start to lose what makes it special: the fresh flavor and the natural health benefits. For high-heat cooking, a more neutral oil makes sense. For everything else, this is where it earns its place.

Can I sip it straight?

Yes, absolutely. Many people do, especially with fresh, high-quality olive oil.

A sensible amount is 1 tablespoon per day, and up to 2 tablespoons if it fits comfortably into your diet. That’s enough to enjoy the flavor and benefits without overdoing it. More isn’t dangerous, but olive oil is still fat and calories add up quickly.

If you’re sipping it straight, most people stick to a spoonful once a day, often in the morning or before a meal.

How should I store the oil to keep it fresh?
