Tunisian Chicken Bowl with Harissa Dressing

Grain bowl energy with North African heat. The harissa-lemon dressing is what you'll make again and again. Build the bowl however you want, but don't skip that dressing.

Ingredients

  • 2 cooked chicken breasts or 2 cups shredded cooked chicken
  • 1 cup cooked quinoa or couscous
  • 1 cup chopped cucumber
  • 1 cup chopped tomato
  • 1/4 cup olives, sliced
  • 2 tablespoons SELMA Extra Virgin Olive Oil
  • 1 teaspoon harissa paste
  • 1 tablespoon lemon juice
  • Salt to taste


Directions

  1. Divide 1 cup cooked quinoa or couscous between two bowls, then top with 2 cups chicken, 1 cup cucumber, 1 cup tomato, and 1/4 cup olives.
  2. In a small bowl, whisk 2 tablespoons olive oil, 1 teaspoon harissa, 1 tablespoon lemon juice, and a pinch of salt.
  3. Drizzle the harissa dressing evenly over the two bowls.
