Cucumber Rounds with Harissa Tuna

Cool cucumber, spicy tuna, a finishing drizzle. Each bite has some heat and some relief. Make these when you want something that looks fancy but takes ten minutes.

Ingredients

  • 1 large cucumber, sliced into thick rounds
  • 1 small can tuna (about 5 ounces), drained
  • 2 tablespoons plain Greek yogurt
  • 1/2 teaspoon harissa paste
  • 2 tablespoons SELMA Extra Virgin Olive Oil
  • Pinch salt


Directions

  1. In a bowl, mix 5 ounces tuna, 2 tablespoons Greek yogurt, 1/2 teaspoon harissa, 1 teaspoon olive oil, and a pinch of salt.
  2. Lay cucumber rounds from 1 cucumber on a plate and top each with a small spoon of the tuna mixture.
  3. Drizzle the bites lightly with the remaining teaspoon olive oil.
